About the steeking project question, there are cute fair isle coffee cozis that provide steeking instructions for one to learn and practice. Then you can put a cute button on it to fasten it around a cup.
Or you could knit a doll or stuffed animal sweater and the steek it, to make a tiny cardigan.
There are a number of steeked colourwork handwarmer patterns where you knit in the round, then cut up to make a matching pair. (They are very much training projects but you do have a usable object when you’ve finished).
